How do I gracefully get out of a contract for a kitchen remodel?

I don't know of a "graceful" way to get out of a contract. If you made the agreement and signed the contract then you are legally liable for whatever the terms are. Usually there is a 3 day recision period during which you can cancel the contract, or if you signed the contract under duress for some reason there may be a possibility. Other than that you are committed. You should not have signed if you did not have the money to do the job!
As stated, you have a 3 day grace period to change your mind. After that, you will probably need to be graceful in court. All you had to tell the contractor was that you didn't have the money.
Look at your contract and see what the termination provision says. If you don't have a contract (and you should), you should come up with a fair way of assessing what the contractor has earned thus far and pay him for the partial job. He'll probably ask you to sign something saying you will not bring any claims against him for not finishing the job.
