I would use semi gloiss paint it is much more durable than a flat paint, it has more washability. You can also use a cashmere or satin, which is one step down from a semi-gloss but still has good durability and washability. Just dont buy the cheapest paint that the store sells, cheaper is not better.
semi gloss for walls. gloss for baseboards,flat is for crap..most living rooms,bed rooms have flat paint.Tough to wash when handprints appear!

Washable satin acrylic is best. If you get gloss paint and
you get the kitchen steamed up a bit, the gloss paint will let the rivers of steam run down the walls - yuk.
