My bathroom is painted brown, the trim is off white, what color should my Roman shades be??

Off white. Keep the window bright even when the blinds are closed.
Any earthy tone will do fine. You can use your shades to lighten up the room. Try a green (not dark and not electric)...more like a mint or something soft like that. Yellow (again not bright) would be nice...soft shade. You can change the colors per season!
I would go with the same color of your trim. Your bathroom sounds gorgeous and very different!!
I would say like a deep red burgundy color!
