I did my bathroom in the cape cod style of wainscoting from home depot. They sell it in prewrapped packages that are about 4 feet long and 8" wide. Its tongue and groove. Very easy to put together. I did a small bath in a few hours.
When we designed our country bathroom, we decided on oak wainscoting. After it was installed and stained, we put 3 coats of marine varnish on it. After 20 years, it still looks great.
