My window is 29'86 I found some great curtains that are 56'86 can I just use one panel?

you can do whatever you want to ,really. As long as it looks Right for your Decor, Be Creative.
using just one panel will let more lighting soak thru tho. If you like your Room darkened during any part of the Day, Maybe Go with the 2 panels.
If you do just use one, for a Clean-simple look, I might consider cutting down the center of it ,longwize -and sewing up the raw edges . That way when you want to let in Light, you'll have Soft Framing on either side of your window, not just one bunched up panel over to one side.

personally tho, I'd use them both. That way i'd get the nice folds and it wouldn't look like i was are skimping.(plus it darkens a room better that way in the daytime, and doesn't let ppl see you as a shadow thru fabric ,at night when your lights are on.)
The general rule for window curtains is to double the length of the curtains (Pocket Rod Panel) for gathers. If the curtains are pleated (Drapes) they need to be the exact size of the outside window frame plus 4". Window measuring can be tricky. For curtains, sheers and valances you need to measure from the outside of the window frame and add 4" (2" on either side) to accomdate the hardware holding the curtains to the wall. You could get away with one panel, you won't have as many gathers and one panel will stop you from opening the curtains in the centre. One panel will gather too much on one side and will be difficult to open and close. I'd buy one panel, take it to a seamtress or tailor and have them cut it in two pieces and sew the side edges. If you plan on putting up a valance with the curtain you need to at least triple the length of material to the window measurement.
Don't as it will not look good. You need two 56" wide panels and they will look luxurious, expensive looking and full.
