Soap is a surfactant. Think of it as a molecule with a hydrophobic(hates water - think oily) and hydrophillic(loves water - think salt) tails. In water, the hydrophobic tails of the molecule surround other molecules that are not very soluble in water (oils/dirt) and making them soluble in water. The "pioneer soap" referred to in previous post is glycerin. Most commercial soaps today are a combination of different types of surfactants. Companies like Proctor & Gamble are pouring tons of money in this type of research.
