I would get a wet dry vac and put water with my favorite cleaner all in the floorboard and then vacuum it up. Use soapy water and wipe it off with paper towels on all windows and upholstery and buy a new air freshener
make the kids clean it, they'll keep their hands off the windows in future :)
oh and don't let them eat in the car
Armoral (bad spelling I think) makes this awesome oxi cleaner. its great for the carpeting. I got it at Pep boys. And as far as smudges, tell the kids not to touch the windows (I do that with my nephew) and whatever is leftover gets windex for glass or armoral for everything else.
for the windows- use a vinager water solution in a spray bottle. it breaks right thru the grease and finger smudges. also believe it or not for a streak free shine use newspaper instead of paper towels.
for the carpets, they have car carpet cleaners that u can purchase in the automotive section at almost any store. there is one by prestone that i know works very well. (also check around at local self car washed- for some have shapooers for cars located w/ the vacuum cleaners
Clean the windows with vinegar and water.
I had the same problem with the carpet in my car when my kids were young. I vacuumed good, then mixed up a bucket full of warm soapy water ( I think I used Surf laundry detergent back then) and used a scrub brush on the carpet . I did it on a really warm day and left the windows down all day so it would dry out and then vacuumed again and the carpet looked like new! If you own a wet vac it would dry much faster, but if not, air drying will work well.
