I just bought a new laundry washer, and there's a button that says soil level, what does that mean?

Soil level, is the amount of dirt in your laundry. A high level, for instance would be for outside playclothes, or towels,(as the have the dead skin cells). A low level would be for office or church clothes,(providing of course you office is not the Saharan Desert, or the local mud pit;).

I'm just guessing but I think that might mean, "How dirty are your clothes?" In other words, you would have lightly soiled, moderate, or heavy.
it obviously means how dirty the clothes are, and why would you be asking yahoo? why didn't you look at the direcections?
