the head gasket is a somewhat soft and heat resistant material between the intake manifold which sits below the carbouretor and the heads which house the valves over the top of the pistons. because it is difficult to get a good seal from leaks on a metal-to-metal connection, a gasket is used to provide a good seal in this connection.

Head gaskets make a seal between the head and the block.
Because w/o it there would be no compression (it would all leak out between the block and head) and coolant wouldn't stay in the engine. If you can figure out a way to accomplish a seal between two metal parts w/o a gasket, I'm sure the automakers would like to talk to you!

Plain and simple, it stops the water from leaking into your exhaust system, I had a ford pickup and the head gasket was blown, and as fast as you could pour the water into the rad, it would come out of the tail pipe.
