What can I add to my dish water that will take the grease off my dishes better?

Try using DAWN dishsoap. It seems to cut thru the grease and does a great job.
I find Dawn dish detergent works very well on grease. You could try a vinegar/water rinse, too, to get the dishes really sparkling clean.
the hotter the water the better wash you get.
I don't know what you can add but I'd wipe as much off as possible with a paper towel then wash in hot water with Dawn.
Clorox Bleach & Hot Water
Cut grease and speed removal of sticky foods on dishes and utensils by adding baking soda to hot sudsy dishwater. Use from 1 tablespoon to 1 cup, depending upon the amount of water your using.
chisel out as much as possible
wipe the rest
run under HOT water
scrub as usual
using :
DAWN or Palmolive or SunLight
pour some into a old bottle and make a concentrated solution
(experiment with "thickness")
after rinsing plate
pour some solution onto plate
slosh both sides
rinse
if still greasy pour some directly onto plate
and repeat
Dawn has a grease cutting spray. Just spray and let set maybe 30 min. It takes off crusty, greasy foods. Just for plates, glasses and silverware .. Dawn!!
Palmolive ultra is what i find the best (it's green). make sure your water is very hot and let soak for awhile.
Bleach in your water will only sanitize.

I would pre-rinse your dishes with hot water before you wash them.
I use Dawn dish soap and it cuts right threw the grease.
