Food decays or gets "rotten" due to the micro-organisms that always exist in food. To prevent them from becoming harmful and causing illness, you must stop them from multiplying.
keeping the food at a cold temperature will not prevent but, it will slow the spoiling process to where the food remains edible and in good condition for days, even weeks at a time.
This is why, unless frozen, any food kept in the refrigerator, given enough time will also spoil.

Bacteria grow most rapidly in the range of temperatures between 40 and 140 °F, the "Danger Zone," some doubling in number in as little as 20 minutes. A refrigerator set at 40 °F or below will protect most foods.

If the food does not break down and get rotten(Twinkies comes to mind) it is more artifical than real(more like eating a frisbee or a rock). Your body won't get anything out of it.
Decay is a natural process to return the elements to the soil. Can you imagine how deep the apple cores would be if they did not decay? Just eat the food before it advances to the decaying stage. After all that is only an advanced stage of being ripe.

Moisture and Warmth!

When food is left outside the moisture and the warmth help the bacteria and other organisms to grow and multiply in your food. Causing the Bad odour and spoilage. Since food and the atmosphere contains lot of different living organisms, the food with moisture and the warm temperature helps these organisms to grow and multiply. This growth is helped by the warm temperature.

The food will eventually get spoiled even when left in the fridge, but it takes longer because of the colder tempreture.
You don't eat it fast enough so bacteria eats it for you, isn't that so nice of them?
