Why does white articles of clothing turn yellow after a certain amount of time?

Combination of minerals in your water and the cloths picking up body oils that stain the cloths over time.
that happens when you use a cheaper bleach and sometimes if you use to much. I keep my whites whiter by using clorox and no other.
Most likely you have iron in your water. Do you use well water or having copper pipes? If so I am certain that is your problem.
Just leaving them in a closet sometimes for a long time seems to have that effect. I have to wonder if it is because they are exposed to the air and after time get discolored then. Keeping the white item in a garment bag seems to prevent that from happening with the bag zipper sealed then.IF you have discolored spots like in the underarm area only or spotty on the shirt then your deodorant, perspiration or laundry soap (maybe bleach) may be the cause of this then. A purse turning from white to yellow may mean your skin oil is the cause then.
Unfortunately, without testing for specifics, there may be several explanations. Pollutants in the air (even though not harmful to you), smoke (even kitchen smoke), ozone, breakdown of the fabric finish, yellowing of the finish itself, just plain handling by you (the oil on your skin), etc. If you want to know, it can be tested, but the cost will be more than a new purse by many times.
The same reason your teeth do, stuff gets spilled on them, or smoke etc. Try using bleach. You only need it occasionally, otherwise it will wear down the fabric. And i think vinegar helps to. Soak the clothes in it for awhile.
You could be using too much bleach or the bleach you are using is cheap. Store white clothing away from direct sunlight. White clothes often have colorless dyes that can turn yellow when exposed to sunlight for a long time . Store clothes in a ventilated area away from furnace vents, which can leak small amounts of exhaust gases that can react with the dyes to fade. Try oxi clean instead of bleach, and it is good not only for your clothes but the air you breathe to have your vent system cleaned out at least once a year.
Do you have a gas or electric dryer? I was told long ago that a gas dryer will cause that.
It's remnants from your detergent. It's not being completely rinsed out. Every other week try running your clothes through an extra rinse cycle. Age also yellows things. Have you ever painted a room white, and 9 months or so it sort of starts to yellow? White is the hardest color to keep white.
