How do you clean a commercial flat grill--club soda and baking soda??

In my restaurant days, we just cleaned with club soda on a hot grill. We also had a brass brush. The brass will not scratch the metal surface but removes most burn marks and stains.
Ok many years in the resturant business with family..And the best thing we have found so far is Pickle Juice..As the grill is cooling..But still warn just dump the pickle juice on it and watch it bubble up the mess..Then use a Charcoal Brisket for cleaning grills and rub it around..Then use the scapper to run the stuff off in the tray and There you go a beautiful clean grill..
Just reheat the griddle and when it's hot wipe down with a damp dish towel. It's cheap/easy and it works.
I always used ice cubes and a grill pad.
