Although not a fabric, leather (or the various leather substitutes now offered through companies like Ashley) is hands down the easiest.
Microfiber, if treated with stain guard, is easy to clean as well. I have successfully removed red wine from a white microfiber couch.
Cotton, or nylon-cotton blends are the most difficult to keep clean.

Microfiber (feels like suede) is very easy to keep clean. We have two kids, a dog and cat, and have cleaned anything and everything off from our microfiber recliner including spit-up, formula, mud, jam, peanut butter, and just about everything else.
